High-end Extra Virgin Olive Oil (EVOO)
Harvested in the months of November and December.
The olives are optimally ripened (dark purple colour).
The flesh (the pulp) is softer with a fat yield in the olive of 20% (omega 9, 6 and 3) and a moisture in the olive of 60%. The fat and moisture content makes the extraction process of this high-end EVOO easier. The oil has a golden-green colour, which is characteristic of the picual variety.

Tasting note
It is an oil of great stability, very fruity and with a golden green colour. This EVOO has an aroma of green olives and figs with a light touch of recently cut fresh grass and wildflowers. A light but pleasant bitterness and spiciness, with a slightly sweet aftertaste characteristic of the ripened olive.
